Kappa Biriyani is a dish that tells the story of Kerala’s agrarian heart. At Green Plate, we follow the old-world method of preparation. We select only the finest, starch-rich tapioca, which is boiled and then mashed to a specific consistency—neither too smooth nor too chunky. Meanwhile, the beef is prepared as a rich 'Bone-In' roast, cooked with a heavy hand of ginger, garlic, and crushed black pepper. The two components are then merged in a large pot and slow-cooked together so the tapioca absorbs the rendered fat and spicy gravy of the beef. The final touch is a tempering of mustard seeds, shallots, and curry leaves in hot coconut oil.
