Our Squid Roast (Koonthal Roast) is a tribute to the coastal bounty of the Arabian Sea. We source only the freshest, medium-sized squid to ensure a tender, non-chewy texture. The calamari rings are marinated in a potent mixture of Kashmiri chili, turmeric, and lime before being slow-roasted in a cast-iron skillet with a massive amount of caramelized shallots and curry leaves. The addition of crushed black pepper and slivers of fried coconut (Thenga Kothu) gives this dish its signature Kerala identity. It is fiery, savory, and incredibly addictive, making it the perfect appetizer or side dish for a traditional meal. Each bite delivers a burst of oceanic freshness balanced by the deep, earthy heat of Malabar spices.
